Two resources I won't hesitate to recommend:

Susan Peterson's Craft and Art of Clay, lots of good info and pics.

Tony Hansen's website (clay and glaze, mostly)  https://digitalfire.com/4sight/education/index.html

I'm still finding You Tube videos I haven't yet seen (and re-watching some favs as well), however, I'm interested in throwing, hence nothing specific comes to mind ...try  "hand building clay techniques" in You Tube search field?

Cobb's Mastering Hand Building gets some good reviews.

Mellissa Weiss, Hand Built

The basics for any ceramics library:

The Potter's Complete Book of Clay and Glazes           James Chappell

The Potter's Dictionary of Materials and Techniques    F&J Hammer

Lots of good books covering the more specialized area of your focus defined by your firing technique

I recently added Mastering Handbuilding by Sunshine Cobb.  The book seems reasonably comprehensive and well put together
